Greek Yogurt, Granola, and Berry Parfait


I have a very picky eater.  My little 3 year old just refuses to eat most food unless it's cheese or yogurt.  Just recently, I realized I was unintentionally letting him eat yogurt that was loaded with sugar.  Since I don't want to force feed him, I had to figure something else out. Enter this Greek yogurt, Granola, and Berry Parfait. 


The other night, I just could not get the little guy to eat anything for dinner.  He didn't want to eat the chicken I had fixed for dinner, he didn't want any of our left overs, and he couldn't even come up with something he felt like eating at all (besides candy.) Finally, after way too long of trying to convince him to eat something, I thought, why not make him think he is getting a treat?  So, I decided to make him a yogurt parfait with Greek yogurt, honey, granola, and fresh mixed berries.



The parfait ended up being a pretty balanced meal.  The Greek yogurt is full of protein.  The granola counts as the grain, and I put enough berries to count as a full serving of fruit.  My husband and I loved the Greek yogurt, granola, and berry parfait too, and thought it would make a healthy breakfast or dessert.   

Greek Yogurt, Granola, and Berry Parfait

  • 1 cup Greek yogurt
  • 4 teaspoons honey plus some for drizzling on top
  • 1/3 cups granola
  • berries of choice (I used blueberries, blackberries, and strawberries)

Directions

1. In a bowl, mix Greek yogurt with the honey.
2. Add 1/2 of the Greek yogurt mixed with honey to your serving dish.
3. Top with granola followed by berries.
4. Repeat until you have the desired amount of layers.
5. Finish off the parfait with a drizzle of honey



I love that we are eating something that is so delicious and beneficial.  I constantly worry that my little boy isn't getting the nutrition he needs.  But when he finishes a whole serving of this parfait with it's crunchy granola, juicy berries, and protein filled yogurt, I know he'll be alright.  This Greek yogurt parfait has been really popular in my house.  Finally, there is something healthy to eat that my hubby, my little guy, and I can agree upon.
