I love the foods associated with this time of year. In fact, I've been making mini Thanksgiving dinners almost once a week for the past month. Turkey, stuffing, green bean casserole, sweet potatoes, cranberry sauce, cornbread - pretty much the works. I've only been making enough for our little family of 3 though, so we don't end up with any left overs. Isn't the second best thing about Thanksgiving dinner the leftovers? And one of my favorite things to do with leftovers is make a yummy sandwich.
Fortunately this turkey cranberry sandwich can be made any time, not just with Thanksgiving leftovers.
Right now, it's my favorite sandwich, and my hubby is loving it too. How can you go wrong with turkey, cranberry sauce, and provolone cheese along with some mayo, mustard, and lettuce on pumpernickel bread? It's pretty much the perfect lunch. Although I must say, swapping out provolone for Havarti is just as awesome. As I finish writing this post, I think I need to go make another turkey cranberry sandwich right now 🙂Turkey Cranberry Sandwich 2 slices pumpernickel bread 6 oz. turkey 2 slices provolone (or Havarti) cheese cranberry sauce mayonnaise mustard lettuce 1. Spread mayonnaise on one slice of bread and mustard on the other. 2. Layer turkey, cranberry sauce, cheese, and lettuce on one slice of bread. 3. Top with remaining slice of bread. Enjoy!
