The stuffing goes into the oven and 25 minutes later you have one super tasty Thanksgiving (or Christmas, or Easter, or everyday) side dish. I love how the apples still have just a tiny bit of crunch and the cranberries add a wonderful little bit of sweetness. I can't wait to serve this stuffing up on my Thanksgiving table this year. Apple Cranberry Stuffing 1 loaf of french bread 1 medium onion chopped 2-3 stalks of celery chopped 1 medium apple diced 1/2 cup dried cranberries 1 cup chicken stock 1/2 cup cranberry apple juice 2 TBSP butter 1/4 cup chopped parsley 1/2 tsp dried rosemary or 1 small sprig fresh rosemary 1/2 tsp dried sage or 2-3 leaves of fresh sage 1/2 tsp dried thyme or 1-2 sprigs fresh thyme 1/2 tsp salt 1/2 tsp pepper 1. Preheat your oven to 350 degrees. 2. Cube the loaf of french bread and toast on a baking sheet in the oven for 10 minutes. 3. Saute the celery and onion in butter until the onion is translucent. 4. Spray a casserole dish with cooking spray and combine all of the ingredients starting with the bread and other dry ingredients. Drizzle with the chicken stock and cranberry apple juice then mix well. 5. Cover the dish with foil and bake for 15 minutes. Remove the the foil and continue baking for an additional 10 minutes. 6. Transfer to a serving dish and enjoy!
