Can you believe that after 3 years of marriage, I'm still meeting my hubby's in town extended family.  One set of cousins that he has, has 8 or 9 siblings that get together every other Sunday for a cookout.  There's plenty of fun, love, laughter, and of course food.  What cookout would be complete without an amazing pasta salad and delicious iced tea?  



Since we live right on the border (as in I can see Mexico from my back yard)  I wanted to create some recipes with a southwest twist to take to the next cookout.  As I was cruising the aisles at Walmart, I picked up some Barilla Pasta and Gold Peak Tea along with everything else I would need for that southwest flavor. 


Pasta is one of the only things that my 5 year old will eat.  I love using Barilla Pasta because I can always count on it cooking up perfectly al dente.  And al dente is exactly what you want when creating this southwest pasta salad.


I love these colors! Don't they just scream summer?  


I chose to use campanelle in my pasta salad, but any bite sized Barilla pasta will work.  I cooked the pasta al dente and then rinsed it under cold water before adding it to a bowl.  Then I topped my pasta with grape tomatoes, orange bell pepper, red onion, green onion, cilantro, corn,  and black beans.


To finish off my southwest pasta salad, I squeezed the juice of 2 limes and mixed it up with some olive oil and salt as a dressing.


On to the tea!  Since I was going for the southwest flavor, I wanted to infuse some unsweetened Gold Peak Tea with mango, lime, and honey.  I really love this combo even though of course Gold Peak is delicious and refreshing on its own,   It has been really nice to just grab a tea out of the six pack when I'm in a rush.


Infusing the Gold Peak Tea is super easy.  All I did was slice some limes, cube the mango and add a little honey.  After just an hour in the refrigerator, the fruit and honey flavor has incorporated beautifully.


This mango, lime and honey infused iced tea will definitely be making an appearance at the next cookout that we host at our house.  For practical reasons, I'll be picking up a few of the Gold Peak Tea 6 packs for one the cousins' get togethers.

Southwest Pasta Salad

1 box Barilla Pasta (campanelle, bowtie, rotoni, or penne)
1 14 ounce can corn (drained)
1 14 ounce can black beans (drained and rinsed)
20 - 25 grape tomatoes (halved)
1/2 medium red onion (chopped)
1 medium orange bell pepper (chopped)
1 green onion (sliced)
handful of cilantro (chopped)
juice of 2 large limes
1/4 cup olive oil
2 Tablespoons salt (or to taste)

1.  Cook the pasta according to the directions, then rinsed under cold water.
2.  Add all ingredients to a large serving dish a mix well.
3.  Refrigerate leftovers.

Mango Lime Honey Infused Iced Tea

1 64 ounce bottle of Unsweetened Gold Peak Iced Tea
1 medium mango (cubed)
1 large lime (sliced)
1/4 cup honey (or to taste)
ice

1.  Add ingredients to a pitcher.
2.  Refrigerate for about 1 hour to infuse flavors.
3.  Garnish with a lime slice.
