My poor juicer hasn't seen the light of day for about 6 months. Seeing as how I ordered a juice pack in this past week's bountiful baskets order, I figured it was time to pull it out and get juicing. I love all kinds of juice, but I was in the mood to make some vegetable juice. This 6 vegetable juice includes cucumber, carrots, beets, tomatoes, kale, and celery.

My juice pack came with cucumbers, carrots, beets, celery, kale, and a whole lot of other wonderful produce. When I make vegetable juice I usually include tomato, cucumber, celery, and carrot. Beets and kale are still very new in my diet, and I had never juiced them before.
So I threw the 6 veggies in my juicer. Um, delicious. And I love the color. Where has this juice been all my life? I used half of a beet, so that is the dominant flavor, and I love it! I predict that this vegetable juice is going to be made pretty much daily in my kitchen from now on 🙂


6 Vegetable Juice
Ingredients
- 1/2 large tomato
- 1 stalk celery
- 1/2 beet (peeled)
- 1 stalk kale (rib removed)
- 1/2 medium cucumber
- 1/2 large carrot (unpeeled)
Instructions
- Combine vegetables in a juicer.
- Stir well before serving.

I'm still a bit wary of drinking an all veggie juice though I've tried using only lemon as the only fruit. I think that recipe included celery, carrots and lemon – I only did so because I ran out of apples.
