My poor juicer hasn't seen the light of day for about 6 months.  Seeing as how I ordered a juice pack in this past week's bountiful baskets order, I figured it was time to pull it out and get juicing.  I love all kinds of juice, but I was in the mood to make some vegetable juice.  This 6 vegetable juice includes cucumber, carrots, beets, tomatoes, kale, and celery.

a juicer with a glass of fresh juice and lots of vegetables

My juice pack came with cucumbers, carrots, beets, celery, kale, and a whole lot of other wonderful produce.  When I make vegetable juice I usually include tomato, cucumber, celery, and carrot.  Beets and kale are still very new in my diet, and I had never juiced them before.

So I threw the 6 veggies in my juicer.  Um, delicious.  And I love the color. Where has this juice been all my life?  I used half of a beet, so that is the dominant flavor, and I love it!  I predict that this vegetable juice is going to be made pretty much daily in my kitchen from now on 🙂

Getting enough veggies into your diet can be hard sometimes, so juicing is just one of the ways that I use to get enough of that nutrition.  Another great way (especially if you don't like veggies) is to sneak in a nutrition powder into your regular recipes.  Pampered Chef has a new line of great nutrition powders called Enrichables.  My kids definitely don't like veggies and won't even try the vegetable juice, but I can sneak in the Enrichables into their food and they don't even notice.

Anyway, I hope you enjoy this vegetable juice recipe and talk soon!

  1. I'm still a bit wary of drinking an all veggie juice though I've tried using only lemon as the only fruit. I think that recipe included celery, carrots and lemon – I only did so because I ran out of apples.

Anyway thanks for sharing this recipe to us.

  2. Well done, you made a good job. Great, you’re alive in your struggle! Now you have your power to come back. Offer you like these juicers, that will help you with everything. That’s not just a juice, but the door in new life!
