For years, my mother insisted that she really did not like risotto. I couldn't understand it. My mom has pretty good taste, and I just could not believe she wouldn't like something that I found so wonderful. I had to prove her wrong.
After some convincing, I got my mom to try some risotto I had made. Guess what. She loved it! I'm so happy that I can try out different risotto recipes on her now, including this Asparagus Risotto.
Asparagus Risotto:
4 Tbsp Butter
1/2 medium onion chopped
1/4 cup dry white wine
1 cup Arborio rice
3 cups chicken stock
1/2 cup asparagus cut into 2 in. strips
1/4 cup parmesan cheese
1. In a heavy skillet, melt the butter and sauté the onion.
2. After about 5 minutes, add the rice and white wine. Allow the rice to absorb all of the wine.
3. Add one cup of chicken stock and asparagus and allow the rice to simmer over medium heat. Allow the rice to absorb all of the liquid.
4. Repeat the previous step one cup of stock at a time.
5. Once the rice is done, add the parmesan cheese, and serve immediately.
I love risotto so much, it's ridiculous. Expect to see a lot more risotto recipes here in the near feature.
