Any kind of tomato will work, but I like to use beefsteak tomatoes. I slice the top and bottom off so both halves will lay flat in a baking dish.
Next, I lightly drizzle olive oil over the tomato halves, followed by a sprinkle of salt, basil, thyme, and oregano.
Then, I cover the baking dish with foil. I bake the tomatoes for 15 minutes at 375 degrees. Once the 15 minutes are up, I remove the foil and add a few slices of Brie. I then continue to bake for another 10 minutes.
The tomatoes are best served immediately.
I have also used Havarti and Mozzarella in place of the Brie and the tomatoes are equally delicious. I hope you enjoy!

What a wonderful snack or simple side dish this would be. I normally only have tomatoes in pasta or sliced on a sandwich. This is a lovely way to try them.
