We were blessed with a BEAUTIFUL Sunday out here in west Texas.  It was the kind of day where it would be a crime to stay indoors.  It's funny how my mom and I are constantly on the same wave length.  Just as I was about to call her to see if she would like to take a picnic out to our favorite winery, she called me to ask me the same thing.  Yes! So, I packed up a picnic and my mom, my little guy, and I headed out to enjoy the afternoon.
 
I live pretty much in the center of the city.  Fortunately, it takes less than 30 minutes to get from my house out into the country.  I can't think of a better way to spend a Sunday out here, than driving on the back roads, passing horses, plowed fields, the mountain views, and seeing actual greenery.
 
  
And then arriving at my favorite winery to enjoy a picnic is like the cherry on  top of  ice cream. 
 
 
Even my little guy can appreciate the relaxing atmosphere here.  He kept telling me how much he liked not only the inside of the building, but playing out in their picnic area as well.
 
 
As if the perfect weather, picturesque scenery, and a glass of sparking wine wasn't enough, we still had our picnic.  I had packed this yummy berry salad.
 
 
 
Mixed greens, slices strawberries, blueberries, red onion, pecans, and gorgonzola cheese make up this wonderful salad.  Of course my little guy, Christian, only wanted berries on his plate, but at least they are good for him.
 
 
I made a dressing for the salad which contained balsamic vinegar, honey, and safflower oil - delish!
 
 
 
Berry Salad with Honey Balsamic Dressing
 
mixed greens
sliced strawberries
blueberries
diced red onion
chopped pecans
gorgonzola cheese
 
For the dressing:
2 parts balsamic vinegar
1 part honey
1 part safflower oil
 
1.  Start with a generous portion of mixed greens.  Arrange strawberries, blueberries, red onion, pecans, and gorgonzola cheese on top.
 
2.  For the dressing, mix all ingredients and give a good shake.  Dress salad immediately.
 
 
 
A pleasant afternoon turned into an even more pleasant evening.  We had some close family friends over for dinner that we haven't seen a really long time.  The berry salad was so good at the picnic, that I decided to serve it at dinner as well. 
 
A scenic drive, a picnic at Zin Valle with berry salad, good friends over for dinner, plus a new episode of Downton Abbey- it was the perfect Sunday 🙂
