I think that I could be perfectly happy eating chicken every night for dinner.  I love it.  But I also like variety, so I try to keep as many different ways to fix chicken as I can in my recipe box.  This Chinese Chicken is one of my no fail ways.  I'm not sure how authentically "Chinese" this recipe is, but it does have the flavors typically associated - ginger, soy sauce, and garlic. 
 

I love the way this Chinese Chicken dish smells when the ginger and garlic start to cook.  It's Heavenly 🙂 

The sauce is similar to a teriyaki sauce in that it is slightly sweet. 




Chinese Chicken:

4 Tbsp. Olive Oil
1 lb. chicken breast cut into bite sized pieces
1 clove garlic minced
1 tsp. fresh ginger minced
1 medium carrot sliced
1 crown broccoli
6-8 spears asparagus cut into 2 in. strips
1/4 cup shredded cabbage
1/4 cup water

For the Sauce:
3/4 cup chicken stock
1/4 cup soy sauce
4 Tbsp. brown sugar
1 Tbsp. cornstarch

1.  Start by making the sauce.  Combine all sauce ingredients and set aside.
2.  Heat 2 Tbsp. Olive Oil in a large skillet.  Add chicken and cook until done.  Set chicken aside.
3.  Heat remaining 2 Tbsp. Olive Oil and add remaining ingredients.  Cover for 3-4 minutes to allow vegetables to steam.  Add chicken back to skillet and add sauce as well.  Allow to cook for an additional 5 minutes.

Serve with white or brown rice
