Can you believe Easter is less than two weeks away?
Last week during the Home and Table Bunny Hop, I shared with you my Easter Dinner Tablescape. Today, the Party Bloggers are doing another Bunny Hop, this time for recipes and menus. I'm sharing with you my Easter dinner menu plan and some serving suggestions.
My hubby has been loving these holiday dinner test runs that I do for Jordan's Easy Entertaining. Since he knew I was planning this, he called up his mom to pop over with his grandma to enjoy our meal. My mom also joined us, so I can safely say that this Easter Dinner menu is both mother and mother-in-law (and even grandmother-in-law) approved!

- Brown Sugar Glazed Ham
- Scalloped Potatoes
- Roasted Carrots
- Sauteed Asparagus
- Deviled Eggs
- Lemon Cupcakes
- Donuts
- Coconut-Pineapple Cake
- Coffee
- Iced Tea
- Lemonade
For special occasions like Easter, I like to serve the main meal family style, meaning everything is on the table on we can pass the dishes around. I almost always serve a traditional ham. I was pleasantly surprised to find that this was a boneless ham, which made serving it even easier than usual.
You might think that entertaining your extended family is the time to break out the fancy recipes. But I'd much rather visit with everyone than having to spend hours in the kitchen, so I keep the food simple (but delicious.)
Popping a ham into the oven takes almost no effort. And my scalloped potatoes are from a box. Sorry foodies - they're just so easy to make and actually taste pretty good. Roasting and sauteing veggies are also just not that time consuming.
Another easy and Easter food traditions menu item is deviled eggs. My little boys love boiled eggs, so I was happy to introduce one of my favorite appetizers to them.
Ingredients
- 6 hard boiled eggs
- 4 Tbsp Mayonnaise
- 1 Tbsp Dijon mustard
- salt to taste
- paprika to taste
Instructions
- split each egg in half and place the egg yolks into a bowl
- add mayonnaise, mustard, and salt to the yolk and combine until smooth and creamy.
- using either a spoon or a piping bag, fill each egg half with the deviled egg mixture.
- Sprinkle with paprika.

Everything was delicious and so easy!
On to dessert! My mom volunteered to make this delicious coconut pineapple cake for dessert. Hopefully I'll get her to share the recipe soon because it is wonderful! It's a white cake with a pineapple filling, covered in seven minute frosting and coated with shredded coconut.
I was planning on only serving the cake with our coffee, but when I ran to the store to pick up some fresh flowers, I saw some mini lemon cupcakes that looked perfect ...
and also some yummy donuts. Don't they look pretty arranged with roses on this galvanized metal cake stand I got from World Market?
You may recognize the cake stand from my Peter Rabbit Party. Since I was using them (even though it was initially just the coconut pineapple cake) I picked up these galvanized metal flower pots from Dollar Tree to go with the dessert and coffee. They're not water tight though, so I placed a bowl inside before adding the flowers.
It was so pleasant enjoying these desserts with some coffee.
