A way to make ice cream sandwiches that I have never heard of before? I love new ideas!  I was reading last month's newsletter from Sprout's, when I saw this idea for easy diy ice cream sandwiches.  I couldn't wait to try this technique, so off to the store I went.


I will definitely try to make ice cream sandwiches like this with homemade cookies, but for now I couldn't pass up some Pepperidge Farm soft baked cookies (they're kinda my weakness.)  I chose some cinnamon bun cookies, and thought that dulce de leche Haagen-Dazs ice cream sounded like a wonderful pairing. 

To make the ice cream sandwiches, you need cookies, and a pint of ice cream in a cardboard carton. Using a serrated knife, cut the pint of ice cream into 1/2 inch slices.


Take a slice of the pint of ice cream and place a cookie on the top and bottom of the slice.


Remove the paper from the pint of ice cream and then you have your ice cream sandwich!


Easy, right?  In the newsletter, they took these diy ice cream sandwiches one step further be rolling them in sprinkles as the grand finale.  I thought that might be a little overkill with these particular ice cream sandwiches, but will definitely try that next time.
