This lemon blueberry glaze is one of those quick and easy recipes that make tasty desserts even more delicious!
Doesn't that flavor combination make you long for warm sunny days? I love lemon and blueberry together. I even like the colors - they just make me happy! And even those these little cakes with this scrumptious glaze would be totally appropriate to whip out for a fancy celebration, they're also great to enjoy on a random lazy afternoon weekday to brighten your spirit.
Make Mini Lemon Blueberry Loaf Cakes
First of all, you'll need something for your glaze to go on top of. I used my Pampered Chef Batter Mixer and Dispenser to whip up this delicious lemon blueberry cake recipe. I love using the dispenser since it means only dirtying up one mixing vessel. It also allows me to have evenly distributed cake batter.
This is one of those doctored boxed cake mix recipes and it's SO GOOD. Instead of water, you use fresh lemon juice and sour cream that ends up with being a perfectly moist cake with incredible flavor. The recipe was intended for a larger cake made in a microwave, but I baked mini lemon blueberry loafs in this pan in the oven. These took about 25 minutes in an oven heated at 375 degrees.
How to Make An Easy Lemon Blueberry Glaze
To make the lemon blueberry glaze all you need is powdered sugar, lemon juice, and blueberry jam. You'll also find it helpful to use:
Use a citrus press to juice the lemon into a bowl. Then add the powdered sugar and blueberry jam. Stir to combine and your lemon blueberry glaze is ready to drizzle on your cake. How easy is that?
You'll notice that I also topped my lemon blueberry cakes with fresh blueberries and lemon zest in addition to the glaze. What a treat!
Next time I think I'll try using a donut hole pan to make even smaller lemon blueberry cakes to enjoy with this glaze.
