Mmmmm.... mushroom rice. Whether I'm serving my family a weeknight dinner or hosting a dinner party, I love super easy but delicious side dishes. With the use of a rice cooker, this mushroom rice recipe couldn't be easier!

I have a bit of an obsession with small kitchen appliances. So when Hamilton Beach sent me over one of their Rice and Hot Cereal Cookers, I was pretty excited! As you may have figured, I host a lot of dinners at our house for friends and family. What I love about my new rice and hot cereal cooker is that there is so little prep time for the dishes I've been making, and I can free up one of my stove's burners.
My dad, my brother, and I are all mushroom fiends! We love mushrooms raw on veggie trays, sauteed as burger toppings, roasted with other delicious vegetables, marinated to go in salads.... pretty much any way you can prepare mushrooms we're down to get grubbin'!!! So I definitely wanted to try mushroom rice in my new Hamilton Beach Rice and Hot Cereal Cooker.
It turned out perfectly! Lots of yummy mushroom flavor and the rice was a creamy consistency - it reminded me of mushroom risotto. But the best part was that it took less than two minutes to throw everything into the Rice and Hot Cereal cooker and after that, all I had to do was press a button. 45 minutes later and we had a scrumptious mushroom rice side dish.

Ingredients
- 1 1/2 cups long grain rice
- 1 can of Cream of Mushroom condensed soup
- 2 cups of beef broth
- 1 10 oz. can of sliced mushrooms (drained)
- Shredded Parmesan cheese (optional) to garnish
Instructions
- Add all ingredients to the bowl of your rice cooker except for the Parmesan cheese.
- Use the "white rice" setting.
- Serve with shredded Parmesan cheese if desired when ready.
