Grilled sweet chili lime shrimp will make your mouth water before it's even done cooking and make you queen (or king) of the grill this summer.

Get Ready for Summer Grilling!
I can't wait for summer. Fireworks, county fairs, and barbecues are all essential for having a fantastic summer. My husband has become obsessed with grilling and has gotten amazing at it. I can't have him showing me up in the cooking department though, so my grilling skills are coming along too.
We live in El Paso, TX so the weather usually allows us to grill outside for most of the year. I don't know about where you live, but the weather has been crazy here so far this year. Back at the end of January I was able to walk around outside in just a tank top. But last week, it was so cold people were walking around in hoodies and coats. IN EL PASO!.....In MAY!!! We usually get really high winds in March (like 50 miles per hour winds) but even that weather had decided to show up whenever it feels like it.
Needless to say, we have not been able to grill outside whenever we want to. I've been really into menu planning lately and it's been frustrating having a grilling plan and not being able to go outside. So I was super excited when Hamilton Beach sent me their new Indoor Searing Grill. Time to enjoy some sweet chili lime grilled shrimp!
Sweet Chili Lime Grilled Shrimp
This recipe could not be easier and with the Hamilton Beach Indoor Searing Grill it's pretty much foolproof. For this recipe I bought a pound of raw shrimp and threaded 5 shrimp onto each of my 5 wooden skewers. The nice thing about using an indoor grill is that there is no need to soak the wooden skewers in water before grilling. It's the worst having your skewers catch on fire on a charcoal grill LOL.
I turned the temperature dial up to sear and coated the grill with some cooking spray before adding my skewers. Then I squeezed some lime juice over the shrimp and let them cook for about 3 minutes on each side to get those beautiful grilling marks.
I definitely wanted the shrimp to be mostly cooked through before adding the sweet chili glaze. There's quite a bit of sugar in the sauce. I wanted a nice caramelized glaze on the shrimp without having any of it burned. For a beautiful thick sweet chili glaze, I brushed the shrimp with the sauce and would then flip the skewer over to continue cooking. I did this about three times, flipping the skewers on the grill about every 45 seconds.

All that squeezing, flipping, and brushing took about 10 minutes and we had some delicious sweet chili lime shrimp. I took it straight of the grill onto my serving dish and topped with some cilantro. I love sweet chili sauce, so I added a small bowl for extra dipping sauce.
Time For Cleanup
The shrimp came out perfect! But one of my favorite things about using the Hamilton Beach Indoor Searing Grill is how easy it was to clean up. The removable hood, grill plate, and drip tray are all dishwasher safe. Once the grill had cooled off, I removed the grill plate and drip tray and was done with cleanup in a snap.
I'm pretty impressed. We have an outdoor charcoal grill and as you know, that can take some serious time. And I hate cleaning those grill grates. Plus, we have really picky eaters so the hubby and I frequently have a different dinner plan for ourselves than we do for the kids. This Indoor Searing Grill is the perfect size for cooking for one or two people with no fuss.

The grilled shrimp turned out so good that I'll probably do most of my seafood grilling recipes on it regardless of the weather.

- 1 pound raw medium sized shrimp (about 25)
- 1/2 cup sweet chili sauce
- 1/2 of a lime
- cilantro to garnish
Instructions
- Prepare shrimp skewers by threading 4-5 shrimp onto each skewer.
- Heat an indoor grill to high. Coat with cooking spray.
- Place skewers onto the grill and allow to cook to about 3 minutes on each side squeezing lime juice onto each side.
- Brush sweet chili sauce on one layer at a time, flipping the skewers until desired glaze is achieved.
- Remove the skewers from the grill and top with chopped cilantro.
- Serve with a side of sweet chili sauce for dipping.
