There are a few ingredients that you can be pretty confident that are in any cook's kitchen.  One of those is olive oil.  I love cooking with olive oil!  I always use olive oil to start off my soups and I don't even buy salad dressing anymore because I like to make my own vinaigrette.  I go through a bottle of Filippo Berio olive oil almost every 3 weeks.


I like using Filippo Berio because it's excellent quality and also affordable.  The olive oil has a mild, slightly sweet flavor that I just can't get enough of.  It's the base for one of my go to pasta dishes - penne pasta with cherry tomatoes and marinated artichoke hearts.


 This is one of those quick and easy recipes that I'm so fond of.  I've been making this pasta for about 8 years, and I can make it in less than 15 minutes.

This dish is super simple with just a few ingredients - cooked penne pasta, tomatoes, artichoke hearts, basil, capers, salt, and olive oil.  But when you're using a really yummy olive oil, you don't need a whole lot of other ingredients to have a knock out meal.

This is such a great recipe for either lunch or dinner.  It can be served as a main course, or as a side and is yummy served hot or cold as a pasta salad.  I usually just eyeball the measurements depending on if I'm making a single serving for myself or making a larger amount for my family.  Today's recipe though is for 2 people, so feel free to adjust the amount.

Penne Pasta with Cherry Tomatoes and Marinated Artichoke Hearts

Penne Pasta with 
Cherry Tomatoes and Marinated Artichoke Hearts (serves 2)

3 cups cooked penne pasta
1/4 cup Filippo Berio Olive Oil
30 cherry tomatoes (halved)
1/2 cup marinated artichoke hearts (roughly chopped)
1 teaspoon dried basil
1 teaspoon salt
2 tablespoons capers
Parmesan cheese as desired

1.  While pasta is cooking according to package directions, heat a medium sized skillet over a medium fire.
2.  Add the olive oil to the skillet and allow to heat for about 30 seconds.
3.  Add the tomatoes, artichoke hearts, basil, salt, and capers.
4.  Saute until well heated and the tomatoes begin to burst (about 6-8 minutes)
5.  Divide the pasta between 2 plates and top with the tomato and artichoke skillet.
6.  Serve with desired amount of Parmesan cheese.
