There are a few ingredients that you can be pretty confident that are in any cook's kitchen. One of those is olive oil. I love
cooking with olive oil! I always use olive oil to start off my soups and I don't even buy salad dressing anymore because I like to make my own vinaigrette. I go through a bottle of Filippo Berio
olive oil almost every 3 weeks.
I like using Filippo Berio because it's excellent quality and also affordable. The olive oil has a mild, slightly sweet flavor that I just can't get enough of. It's the base for one of my go to pasta dishes - penne pasta with cherry tomatoes and marinated artichoke hearts.
This is one of those quick and easy recipes that I'm so fond of. I've been making this pasta for about 8 years, and I can make it in less than 15 minutes.
This dish is super simple with just a few ingredients - cooked penne pasta, tomatoes, artichoke hearts, basil, capers, salt, and olive oil. But when you're using a really yummy olive oil, you don't need a whole lot of other ingredients to have a knock out meal.
This is such a great recipe for either lunch or dinner. It can be served as a main course, or as a side and is yummy served hot or cold as a pasta salad. I usually just eyeball the measurements depending on if I'm making a single serving for myself or making a larger amount for my family. Today's recipe though is for 2 people, so feel free to adjust the amount.
