My little guy, Christian, just started kindergarten this year.  We're all still getting used to this new schedule, and it's going to get even tighter when peewee football starts back up next month.  I love to cook, but lately I just haven't had the same kind of time or energy to make my usual dinners that take 30 minutes or more.  These cheesy pinto bean and rice burritos are pretty much the easiest dish you can make and take less than 5 minutes to put together. 



The secret to such a fast dish is Uncle Ben's Ready Rice. The Uncle Ben's Ready Rice only takes 90 seconds in the microwave.  And with so many different flavors to choose from, it's been an awesome addition to dinner as a side dish.  



For this particular dinner, the rice was going to be one of the main ingredients.  I love a great deal, so I used the Ibotta coupon for $0.75 off Ready Rice products exclusively at Walmart.  I picked up several flavors that would also work in these burritos but decided to go with the Pinto Beans & Rice Ready Rice.  



I've discovered that one way to get my little guy to actually eat something besides pizza, is to have him help me make dinner.  So, I enlisted his help to put the burritos together.

I set out the Pinto Beans & Rice Ready Rice in a bowl along with some warmed tortillas, cheese, pico de gallo, and sour cream.



I had planned on everyone making their own burritos, but Christian had so much fun putting his together, that he wanted to make mine too.



First goes a layer of rice right down the middle of the tortilla.



And then top that with the cheese.  For Christian, that's all he wanted, but I wanted to add some pico de gallo and sour cream.



Then just wrap them up.  For such a simple recipe, these were really yummy.  Plus Christian  actually ate dinner.

Cheesy Pinto Bean and Rice Burritos (makes 4)

4 flour tortillas
1 package of Uncle Ben's Pinto Beans & Rice Ready Rice
1/2 cup of shredded cheese
pico de gallo (optional)
sour cream (optional)

1.  Heat the Ready Rice according to the direction.
2.  Warm the tortillas in the microwave for 20 - 30 seconds for easier rolling.
3.  Place desired amount of Pinto Beans & Rice Ready Rice on top of a tortilla.
4.  Top with desired amount of cheese and pico de gallo and sour cream if using.
5.  To seal the burrito, fold the bottom of the tortilla up and the roll the burrito starting at one side.
