The other day, the hubby discovered that he has high blood pressure.  Now, we have even more reason to eat healthy.  This week has been pretty good so far.  Lots of salads 🙂  I love salad, and fortunately he does too (now if we could just convince my 3 year old.)  I've been trying to fix up a variety of salad recipes, and right now this Mediterranean salad is my go to. 

Mediterranean Salad Ingredients

I can't get enough marinated artichoke hearts and Kalamata olives. They are the main reason why I named this Mediterranean salad.  Well that and the feta cheese

Since we have been eating so many salads, I keep my fridge stocked with salad ingredients. I have been buying pre-packaged and pre-washed mixed greens.  This makes all of the salad prep quick and easy.  To make this Mediterranean salad recipe, after I throw some mixed greens on our plates, I simply add sliced grape tomatoes and cucumber, followed by the artichoke hearts and olives straight out of their jars.  Then I top that off with a crumble of feta cheese.  Yum!!! This is one of the easiest salad recipes ever.

The dressing is also super simple.  I like to use the oil from the marinated artichoke hearts, a drizzle of white wine vinegar and a squeeze of lemon.  Lastly, comes some salt and pepper. That's it!

I love these flavors together.  The tanginess of the feta cheese with the briny flavor from the olives and artichokes are just so delicious.

Hopefully, with salad recipes like this, we can get my hubby's blood pressure back down in no time.  But in addition to our own enjoyment, this is one of my best salad recipes for entertaining guests too.  It's so easy to throw together and almost everyone likes it.

Salad Prep Essentials

There are only a few kitchen tools you really need if you are going to be making salad.  One would be a really good cutting board like this one.  You also want nice sharp knives like these.  If you are not using pre-washed greens you may also want to grab a salad spinner like this one

Mediterranean Salad

This Mediterranean salad is one of the best salad recipes you can make in practically no time! Full of yummy salad ingredients like grape tomatoes, cucumber, olives, artichoke and feta cheese, this salad is perfect for summer entertaining.

Ingredients

  • 8 ounces mixed greens
  • 1/2 cup grape tomatoes
  • 1 medium cucumber (chopped)
  • 1/2 cup marinated artichoke hearts (and 4 tbsp oil for dressing)
  • 1/4 cup Kalamata olives
  • 1/4 cup feta cheese
  • 2 tbsp white wine vinegar
  • squeeze of lemon
  • salt to taste
  • pepper to taste

Instructions

  1. Add desired amount of mixed greens to serving plates.
  2. Top greens with tomatoes, cucumber, marinated artichoke hearts, olives, and feta cheese. 
  3. Spoon oil from marinated artichoke hearts over salad.
  4. Drizzle desired amount of white wine vinegar over salad and a squeeze of lemon. 
  5. Finish with salt and pepper to taste.

    What a delicious salad! I love olives (and so do my daughters) and my husband love artichoke hearts – perfect! My 6 and 2 year old love salads. That wasn't always the case, but if the kids help make the salad, there's a really good chance they'll be willing to try it. My 6 year old cuts all the vegetables for our salads, and my 2 year old "helps" me wash everything and sprinkle nuts, cheese, or whatever toppings we put on the salad. Thanks for sharing such a delicious salad!
