I started with a fresh, ripe pineapple.
There may be another way to hollow out a pineapple besides a pineapple corer, but I have no idea what that would be.
To hollow out the pineapple, I sliced off the top and twisted the pineapple corer until I was about 2 inches away from the bottom. Then I pulled the corer out.
I used a knife to slice the pineapple off of the corer, even though the top can come off to allow a continuous spiral of pineapple. I put aside 4 whole slices, and cut up the rest. Then laid everything out and sprinkled the pineapple with chili powder.
I put all of the pineapple chunks back into the pineapple, and then arranged the slices on the side. Then, I pulled put 3 leaves from the top of the pineapple, rinsed them off, and then arranged them in the pineapple as well.
That's it! I love the way this pineapple is served.
