I love to prepare egg cups in muffin tins because it is so quick and easy and perfect if you are serving a small crowd. To make these stuffed prosciutto egg cups, first spray a muffin tin with cooking spray. Then lay a piece of prosciutto into each muffin tin cup. Press in a thin layer of prepared stuffing on the bottom and sides of the cup. Bake the prosciutto and stuffing in the oven. Remove the muffin tin from the oven, then place an egg into each cup and top with cheese and pepper. Then pop the muffin tin back into the oven.

I love a nice runny egg yoke, so I bake mine for 6 to 8 minutes. If you prefer a more set egg yolk, then leave the egg cups in the oven for 9 to 11 minutes.
The prep time on this prosciutto egg cup recipe is minimal and you can prepare a delicious breakfast for a lot of people all at once.
I made this recipe yesterday, and although everyone at my house loved them, there were still some left over. So, I put the extra egg cups into my refrigerator. And today I discovered that after about 45 seconds in the microwave, these still tasted amazing! You know what that means, right? Yup - this savory Christmas recipe can be prepared ahead of time!

Savory Stuffed Prosciutto Egg Cups Recipe
Ingredients
- 12 pieces of prosciutto
- 1 box stuffing prepared according to the directions
- 12 eggs
- 1/2 cup shredded cheese
- pepper to taste
Instructions
- preheat your oven to 450 degrees
- coat a 12 cup muffin tin with cooking spray.
- line each muffin tin cup with a piece of prosciutto
- Add enough stuffing to each cup to coat the bottom and sides, making sure to press firmly into a thin layer.
- Bake the prosciutto in the oven for 10 minutes then remove from the oven.
- Add and egg and some cheese to each cup and top with desired mount of pepper.
- Bake 6 to 8 minutes for a runny yoke, or 9 to 10 minutes for a more set yolk.
