Why order takeout when you can make this irresistible savory vegetable Hakka noodles recipe at home?

Loaded with veggies and bursting with flavor - these savory vegetable Hakka noodles are my new favorite lunch. It's so yummy, plus it's pretty budget friendly and can be made in no time. If you love ramen, you'll really enjoy Hakka noodles. 

Hakka noodles are made from wheat and used in Indian and Chinese cuisine. They come in different widths and I picked up Hakka wide noodles for my recipe.  Cooking the Hakka noodles al dente gives this dish the perfect chewiness and I like to stir fry my veggies long enough to leave a little bit of crunch.

You can most likely find Hakka noodles at your grocery store, but you can also get Hakka noodles on Amazon.

How To Make This Savory Vegetable Hakka Noodles Recipe

I can't say anything about the authenticity of this dish because I'm new to how traditional Hakka noodles are normally prepared.  But I DO KNOW that this savory vegetable Hakka noodles recipe is beyond delicious, is quick and easy, and it keeps me from ordering takeout. 

I used tomato, mushrooms and zucchini as the vegetables along with cilantro for my Hakka noodles because that's what I had in my refrigerator when it was time to make my lunch. But I love this veggie combination when I'm making anything close to a stir fry and the flavors are so good together.  Next time, I'll probably add some baby corn too.

First boil a pot of water.  Chop up the veggies into bite sized pieces as well as the cilantro.   Add some olive oil (sesame seed oil is also delicious) to a pan and stir fry the veggies. Meanwhile, cook the noodles for about 4 minutes for a delightfully chewy texture.  Drain the Hakka noodles and add them to the pan along with the soy sauce. Continue cooking for one or two minutes.

Add everything to your serving bowl and top with cilantro and sesame seeds.

Savory Vegetable Hakka Noodles Recipe

Skip the takeout and stir up some vegetable Hakka noodle goodness is no time. Packed with veggies, bursting with flavor, this easy recipe is perfect to satisfy your craving.

Ingredients

  • 1 package of Hakka wide noodles
  • 1 TBSP olive oil (or sesame seed oil)
  • 1/2 cup chopped tomato
  • 1/2 cup chopped zucchini
  • 1/4 cup chopped mushroom
  • 1.5 tsp soy sauce (or use the soy sauce packet included in the Hakka noodles)
  • 1/2 tsp sesame seed
  • 2 TBSP of chopped cilantro

Instructions

  1. Bring a medium pot of water to a boil.
  2. Add the Hakka noodles and cook until al dente, about 4 minutes, then drain.
  3. Meanwhile, heat the oil in a pan and stir fry the tomato, zucchini, and mushroom.
  4. Add the drained Hakka noodles to the stir fry and add the soy sauce.
  5. Stir fry for roughly 2 more minutes.
  6. Add the vegetable Hakka noodles to your serving dish and top with cilantro and sesame seeds.
