I had almost forgotten about this recipe and how much I love it when I was trying to figure out what to post next. All of a sudden, it was like a little light bulb went off. This sweet chili onion dip with avocado and cilantro would not only be the perfect thing to share on Jordan's Easy Entertaining, but with my family as well. I haven't made this dip in over 2 years and have never made it for my family here in Texas. I was lucky enough to learn of this recipe one 4th of July, a few years ago, thanks to my little guy's grandmother. I knew it would be a hit today, and I was right. To start off, you need:
Sweet Chili Sauce
1 small avocado
1/2 small red onion
cilantro
1 block of cream cheese I begin by chopping my red onion very finely. Then, dice the avocado and finely chop the cilantro. Next, I add the onion, avocado, cilantro and about 1/2 cup of sweet chili sauce to a mixing bowl. Once the dip is mixed up nicely, I place a block of cream cheese on my serving plate, and top with the dip.
I like to serve this Sweet Chili Onion Dip with crackers, but tortilla chips taste great as well. The combination of flavors is just wonderful. I love the sweet and spicy taste of the chili mixed with the cool and refreshing avocado and cilantro. The red onion gives the dip a nice crunch.
