Know what I love about our modern day and age? We can get tropical fruit even when it's snowing outside. Then we can make tropical fruit and yogurt parfaits!
My earliest memories are from when I was 4 years old and living in Hawaii. We lived on the very small Navy base of Ford Island. In fact, we lived next door to the house in the John Wayne movie In Harm's Way. It was the best!
My brother and I, along with all of our little friends could run around and play all over our neighborhood. We would swing in the tree vines, go watch the hammerhead sharks at high tide, and pick up the coconuts and mangoes when they had fallen. We were perfectly safe and carefree with nothing to worry about besides having fun.
I love how just the smell and taste of something can bring on a memory. I was so happy that I was able to purchase a tropical fruit pack with my last Bountiful Baskets order. Opening the box was like a flashback to being 4. I got a pineapple, a coconut, mangoes, kiwis, oranges, limes, and vanilla beans (and it was only $12.)
I used some of my pineapple, mango, and kiwi with vanilla yogurt and sweetened coconut to make this parfait. Delicious! At least for me, there's no way to be in a bad mood when I have something so nostalgic in front of me.

Tropical Fruit Yogurt Parfait (serves 1)
Ingredients
- 1 kiwi
- 1/2 mango
- 1/4 cup pineapple
- 1/2 cup vanilla yogurt
- 2 Tablespoons sweetened shredded coconut
Instructions
- Cut kiwi, mango, and pineapple into uniform cubes.
- Add half of your yogurt to your serving dish followed by half of the kiwi, mango, and pineapple.
- Repeat the layers.
- Top with the coconut.
