Wondering how to make instant ramen better?  Try adding zucchini and mushrooms!

Things to Add to Ramen Noodles

Ramen noodles is one of those pantry staples that I always have on hand.  I love how quick and easy it is to prepare.   But I get a little board eating it plain, and there's all kinds of things to add to ramen to make it better.  Today I'm sharing with you this ramen recipe that includes zucchini, mushroom, green onion, and egg. Yum!

If you happen to follow my Instagram account you may have already seen the picture I posted about "shopping" in my mom's backyard.  My mom only lives 15 minutes from me, and we have a pretty amazing garden project going on.

Every time I go out there, it seems like a bountiful harvest.  We have been enjoying all kinds of zucchini and yellow squash dishes.  This is the first time we've had a garden like this and haven't really grown any veggies in the last 8 years.  My mom has a pretty large section of her backyard dedicated to the garden, and my boys really love going out there to see what's new.

Right now, there is a ton of zucchini, yellow squash and several different herbs.  I can't wait for the tomatoes, peppers, beans, pumpkins, and okra to start producing.  It looks like we'll be indulging in some fresh corn this weekend.

There is something so satisfying about picking food out of the garden to use immediately.  I can't wait to plan a whole meal from out there.

Anyway, since there is so much zucchini to use up, I figured I would through some into my ramen.  And while I'm at it, why not add some mushrooms, green onion, and egg too.

This combination was so good! I love the flavors and the texture that these ingredients add to ramen noodles.

zucchini, mushroom and eggs are yummy things to add to ramen

Zucchini Mushroom Ramen

Yield: 2

Ingredients

  • 1 package ramen noodles
  • 2 cups water
  • 1 egg
  • 1 medium zucchini sliced
  • 3 - 4 large mushrooms sliced
  • 1 green onion diced
  • 2 Tablespoons olive oil

Instructions

    1. Heat the olive oil in a skillet over medium heat.
    2. Add the zucchini and mushrooms and saute for about 5 minutes.
    3. Meanwhile,  bring 2 cups of water to boil in a pan.  
    4. Add ramen flavor packet.
    5. In a small bowl, whisk together the egg.
    6. Pour the egg slowly into the broth as you gently stir.
    7. Add the ramen to the broth and allow to cook for 3 minutes.
    8. Add the sauteed zucchini and mushrooms to the broth and give a good stir.
    9. Divide the ramen between 2 bowls and top with the green onion.
